Vegetables provide many nutruents, dietary fiber, and Vitamins A and C; eating vegetables high in potassium can also help to maintain a healthy blood pressure. We have listed a few of easy receipes utilizing vegetables that you can try.
Caprese Salad
3 vine-ripe tomatoes, 1/4-inch thick slices
1 pound fresh mozzarella, 1/4-inch thick slice
1 bunch fresh basil
Extra-virgin olive oil
Coarse salt and pepper
Layer the tomatoes, mozzarella, and basil leafs on a platter and drizzle with olive oil and sprink with coarse salt and pepper.
For a twist drizzle on a little balsamic vinegar
Glazed Carrots
Place Carrots in large saucpan, cover with water and bring to a boil. Reduce heat to low, cover, simmer until carrots 8-10 minutes, carrots should be tender. Drain and set aside in a bowl.
Melt butter in saucepan, stir in brown sugar, salt, and pepper. Stir until sugar has dissolved.
Toss Carrots in Brown Sugar sauce
Bake on 350 until carrots are roasted and glazed
